Turkey Chips Casserole

I made this casserole for dinner today. Soooo super easy.


Ingredients:
  • ground turkey
  • taco seasoning
  • spanish rice (made according to directions)
  • can mexi corn
  • can black beans
  • tortilla chips of your choice ( I used Garden Salsa Sunchips)
  • shredded cheese
  • sour cream
Directions:

Preheat oven to 350*. Use 9 x 13 baking dish.

Brown turkey and add taco seasoning according to package directions. At the same time, cook spanish rice according to package directions. When both are ready, mix turkey and rice together along with one can of mexi corn and one can of black beans.

Put entire mixture in baking dish. Sprinkle with crushed tortilla chips of your choice. Then sprinkle shredded cheese over chips.

Put casserole in over for 15-20 minutes or until cheese is melted. Serve immediately and top with sour cream. You can also top with salsa and guacamole if you like. Enjoy!

My New Favorite Thing

SSShhhhh! Don't tell anyone, but I got an early Christmas present. She will make this challenge much easier. Isn't she pretty? Now I think I may have to get some of the pretty vinyl I have seen around blog land and dress her up!

Gadgets For The Kitchen

The last time I was at the Dollar Tree, I picked up some new measuring cups and spoons. I also saw that they had a pretty good selection of different random gadgets for the kitchen. I think after the holidays, I'm going to clean out my junky gadget drawer in the kitchen and get some new things. Like bowl scrapers, spatulas, etc. I'll post what I end up coming home with after.
